Logic level should not be a problem. Just power the amplifier at 3.3v. Implementing the SPI protocol over an XBee connection may not be so simple.

Sounds like a baud-rate mismatch. Make sure that your serial monitor baud-rate is set to the same rate as Serial.begin() in your setup() (I believe it is 115200 in the Echo sketch.)

The chip in the FOB is in a DIP package and the data sheet gives the pinout and a reference circuit diagram showing the button connections. It should not be difficult to solder in leads from your arca...
